The dark meat is some of the moistest you can find on the chicken. It will soak up the marinade and is topped with BBQ sauce. This can also be cooked indoors just as easy as well.
Rinse your chicken. Rub salt and pepper into the quarters. Pour your chicken and fish marinade on the quarters. Allow to marinate in the fridge for 3 hours. Take the quarters out of the fridge 20 minutes before cooking.
Combine the remaining ingredients in a mixing bowl and stir till they are blended. Save and reserve for later use.
Light/Start your grill, and heat until medium-high heat (350-375°F, or till coals are white). Place on grill and cook for 12-15 minutes. Turn the chicken over and baste with half of the sauce you saved in step 2. Cook for another 9-12 minutes. Remove from grill and baste with remaining sauce.
If you happen to have bad weather or want to cook inside. Simply grab your quarters and place in a deep baking pan. Pour your BBQ sauce over them, and coat them well. Set your oven to 400°F and bake for about 50 minutes, and baste throughout the process.
